This Asian Pasta Salad is tossed in a ginger almond turmeric dressing and goes great with some crispy tofu or grilled shrimp for a meatless meal.
Pasta salad season is here! I think we are all grateful here in the north, to jump into warmer weather. I love pasta salads because what’s easier than tossing everything in a bowl and pouring some dressing over it? Nope, nothing. That’s right so get out that grocery list and write down the ingredients to this Asian pasta salad because its so friggin good!
Ingredients for Asian Pasta Salad
Soba Noodles: aka buckwheat noodles, can be found at your local grocery store in the international food aisle. Not only are soba noodles the softest wheat noodles you’ll ever eat but they are minimally processed and contain 6 grams of protein per serving. That’s pretty good for a grain. If you house is up for meatless Monday’s, this is a great way to add protein to your meal.
Bell Pepper + Carrots + Green Onions: So many different textures here! They all add a nice accent crunch to the pasta salad. I’m sure you are all well aware of how good vegetables are for you, but if you are making me I’ll tell you they are full of vitamin C, carotenoids (think good for your eyes) and biotin (hair, skin and nails! YASSS).
Almond Turmeric Dressing: Yep, you’ve seen this before. I posted this recipe about a year ago. It’s bright, pungent and flavorful. It also coats the noodles with it’s creaminess adding some depth of the dish.
Soba noodles only take about 4-5 minutes to cook. While they are cooking chop up the vegetables and make the almond turmeric dressing in a mason jar. This makes for an easy clean up and the sauce mixes easier by shaking it in a jar rather than whisking in a bowl. You can use a ginger puree like this one, or use the real stuff and grate with a zester.
What I love about this Asian Pasta Salad is the soft texture of the slippery soba noodles. The noodles combined with the creaminess of the almond turmeric dressing, gahh.
Pair it with a Protein
This Asian Pasta Salad has 9 grams of protein per serving. You could leave it as is, or pair it with a protein. Some suggestions:
- Baked tofu
I have not tried using this recipe with peanut butter in place of the almond butter in the almond turmeric dressing but it should work well! Let me know in the comments below how you like it!Print

8 ounces soba noodles (buckwheat noodles)
1 red bell peppers, chopped
4 green onions, light green & white parts only
2–3 carrots, julienned
1/4 cup crushed peanuts
1 batch of Almond Turmeric Dressing
Option to top with some cracked black pepper
- Cook soba noodles according to package instructions.
- While the noodles are cooking, mix ingredients for dressing in a mason jar and shake well.
- Combine green onions, peanuts, carrots, bell pepper and drained noodles in a large bowl.
- Pour almond turmeric dressing overtop and toss to coat.
- Top with additional green onions, crushed peanuts and cracked pepper.
Pair it with a protein: shrimp, tofu or edamame are ones I would suggest!
