Description
These buffalo cauliflower protein wraps are filled with buffalo cauliflower, creamy blue cheese sauce and avocado, all in a protein tortilla wrap. A vegetarian meal that is loaded with plant based protein.

Buffalo Cauliflower
- 3/4 cup flour
- 3/4 cup milk
- 1/2 cup buffalo sauce (any variety)
- 3 tbsp coconut oil, melted
- 1 large head of cauliflower florets
- 1 pack of Mission® Protein Tortilla Wraps
Instructions
- In a large bowl (or zip lock bag), combine flour and milk. Mix the two until no clumps appear.
- Pour the cauliflower florets into the zip lock bag, or bowl, and toss until each floret is coated in the flour mixture.
- Bake at 425F for about 15 minutes. While the cauliflower is cooking, prepare the buffalo sauce. Mix the buffalo sauce with coconut oil. This helps it stick to the cauliflower better!
- Once the cooking time is up, pour the buffalo sauce over the cauliflower and bake for another 5-10 minutes.
- The cauliflower will appear to have a "buffalo batter" around it. Perfecto!
- Spread the mashed avocado on the wrap. Top it with a few buffalo florets and drizzle with blue cheese sauce.
- Roll up the wrap and enjoy!
