Let's back up for a second - how are you? How is your December going? I'm in the midst of all the holiday shopping and baking around here. I really do love the holidays, mostly for the fashion and food trends that emerge each year.
The holidays are a more indulgent time of year (nothing wrong with that by the way)! However, I wanted to bring you a meal that is lighter and a bit healthier than the foods you're probably eating at holiday parties. These Buffalo Cauliflower Protein Wraps are full of flavor! The Mission® Protein Tortilla Wraps are not dry like many other wraps. It lends a great texture and flavor to the recipe, plus it’s lower carb and high fiber.
Ingredients in Buffalo Cauliflower Protein Wraps
- Buffalo cauliflower: If you guys haven't made these before, you HAVE to try!
- Blue cheese sauce: Quite simply the easiest sauce and way healthier than the traditional blue cheese dressing!
- Avocado: Who doesn't love avocado on everything?! I love avocado in my wraps and it gives the recipe an extra boost of omega-3 fatty acids!
- Mission® Protein Tortilla Wraps: These wraps are genius! They provide an outstanding addition of protein to the meal along with contributing only 3 net carbs per tortilla! Look for them at your local grocery right by the other wraps for recipes and meals that are quick and easy to make.
Other Ways to Use Protein Tortilla Wraps
- They are great for kids who don't eat the meat on their plate (hello, that was me when I was little!🙋🏻♀️)
- You can use them as a snack with some peanut butter and banana.

How to Make Buffalo Cauliflower
Making the buffalo cauliflower that goes into these protein tortilla wraps is simple! Follow the steps below:
- In a large bowl (or zip lock bag), combine flour and milk. Mix the two until no clumps appear.
- Pour the cauliflower florets into the zip lock bag, or bowl, and toss until each floret is coated in the flour mixture.
- Bake at 425F for about 15 minutes. While the cauliflower is cooking, prepare the buffalo sauce. Mix the buffalo sauce with coconut oil. This helps it stick to the cauliflower better!
- Once the cooking time is up, pour the buffalo sauce over the cauliflower and bake for another 5-10 minutes.
- The cauliflower will appear to have a "buffalo batter" around it. Perfecto!

Ingredients
Buffalo Cauliflower
- ¾ cup flour
- ¾ cup milk
- ½ cup buffalo sauce (any variety)
- 3 tbsp coconut oil, melted
- 1 large head of cauliflower florets
- 1 pack of Mission® Protein Tortilla Wraps
Instructions
- In a large bowl (or zip lock bag), combine flour and milk. Mix the two until no clumps appear.
- Pour the cauliflower florets into the zip lock bag, or bowl, and toss until each floret is coated in the flour mixture.
- Bake at 425F for about 15 minutes. While the cauliflower is cooking, prepare the buffalo sauce. Mix the buffalo sauce with coconut oil. This helps it stick to the cauliflower better!
