1/2 lemon, juiced (~ 2 tbsp)
1/4 cup extra virgin olive oil
1/2 tbsp honey
1/2 shallot, diced or roughly chopped
3/4 tbsp dijon mustard
optional: 1/4 tsp salt and freshly cracked black pepper
- Combine all ingredients in a bowl or the bottom of an immersion blender or blender cup. Pulse until smooth.
- If not using a blender, whisk ingredients in a bowl to emulsify.
Store in refrigerator for up to 2 weeks.
