Since I started working from home, I found myself snacking all day and not eating any true ‘meals’. I knew this had to change because we were going through skinny pop like it was our job. One of my saving graces has been sauces and dressings that go with almost every leftover I have. Thus, I introduce you to my go-to… creamy salad dressing.
How to Make Creamy Homemade Salad Dressing
Remember that immersion blender that’s been sitting in your cabinet since your wedding shower? Pull that bad boy out! Using an immersion blender is by far the easiest way to prepare this recipe. Brides, if you don’t have this on your registry, get on it! It’s so affordable and has a million uses in the kitchen. I use it in soups and other sauces to make them all smooth, creamy and dreamy.
If you don’t have an immersion blender, you could use a small handheld blender. It will do the trick.
Ingredients

- Shallot
- Lemon juice
- Dijon mustard
- Honey
- Extra virgin olive oil
- Salt and pepper if you wish
I love to put this dressing on just about anything! Doesn’t have to be on a salad. I’ll add it to eggs, stir fry, or leftover roasted vegetables. I really like it in anything that has little noodles or grains, like quinoa or couscous. It gets around every little granule and punches up the flavor. It really is my go-to sauce for just about anything. Plus, it’s so bright and bold, which is perfect for summer and ramping up leftovers.

Description
This creamy salad dressing is creamy and tangy with a touch of sweet. With just 5-ingredients, its smooth texture will dress your food with flavor and get into every nook and cranny.
Ingredients
½ lemon, juiced (~ 2 tbsp)
¼ cup extra virgin olive oil
½ tbsp honey
½ shallot, diced or roughly chopped
¾ tbsp dijon mustard
optional: ¼ tsp salt and freshly cracked black pepper
Instructions
- Combine all ingredients in a bowl or the bottom of an immersion blender or blender cup. Pulse until smooth.
- If not using a blender, whisk ingredients in a bowl to emulsify.
Notes
Store in refrigerator for up to 2 weeks.
