Hi guys, hope you all had a wonderful fourth of July. I can’t believe summer is almost halfway over. I haven’t even come close to having my fair share of mojitos, lazy beach days and long bike rides.
I’ve been eating these one sheet pan chicken fajitas with avocado sauce on repeat for the past couple weeks. Nothing says hayyy summer like food eaten with your hands, especially foods with avocado sauce. The fajita seasoning is also low sodium- heart healthy, people!
These one sheet pan chicken fajitas with avocado sauce are super easy to prep, eat and clean up! All you basically need besides the ingredients are:
- Knife
- Sheet pan
- Blender or food processor ( for the sauce)

I found these reasonably priced tortillas by Mission Organics. Sean and I always have a debate about corn versus flour. I’m all in on corn, naturally he is all for flour. These tortillas are a good in between and aren’t as expensive as some others. Plus the first ingredient is ORGANIC WHEAT FLOUR! This is important that it isn’t enriched (Enriched means it's basically more manufactured and stripped from its original wholesome ingredients). This is a good tip for when you are hunting for bread too!

Description
These one sheet pan chicken fajitas with avocado sauce can be made in under 30 minutes and is an easy clean up! Peppers, avocado and low sodium fajita seasoning makes for a heart healthy meal.
Ingredients
Low sodium fajita seasoning
- 1 tbsp cornstarch
- 1 tbsp Chili powder
- 2 tsp cumin
- ½ tsp black pepper
- ½ tsp smoked paprika (can use regular)
- ½ tsp garlic powder
- 1 tsp onion powder
- ¼ tsp cayenne pepper (optional)
Chicken fajitas
- 6 large chicken breasts
- 3 bell peppers, cut into strips
- ½ cup onion, cut into strips
- ¼ cup avocado oil (or extra virgin olive oil, canola or grapeseed)
- 6 Mission organics flour tortillas
Avocado Sauce
- 1 medium avocado
- 1 tsp garlic, chopped
- ¼ cup cilantro
- 1 whole lime, juiced
- 1 cup water
Instructions
- Preheat oven to 450.
- Chop vegetables and place on sheet pan with chicken breasts on one side and vegetables on the other.
- Drizzle vegetables and chicken with avocado oil and sprinkle low sodium fajita seasoning on top. Rub seasoning into chicken and vegetables until coated.
- Place in oven and cook for 15-20 minutes ( depending on thickness of chicken) or until chicken no longer pink in the middle.
- While the fajitas are cooking, prepare the avocado sauce by combining the ingredients in a blender.
- Once fajitas finish cooking, place 3-4 oz of chicken in a tortilla with vegetables, top with avocado sauce and garnish with lime.
Notes
Avocado sauce will keep in the fridge for up to 2 weeks in an airtight container.

Made this today for dinner and it was so good! I have to watch my sodium intake and I appreciate the fact that there is no salt added. The avocado sauce makes a lot so I would only make 1/2 next time, but it takes the place of adding sour cream which is nice since I have to watch my dairy intake also. I just added my low sodium salsa to my fajita and it was delicious. Thank you for a wonderful recipe!
