These lettuce wraps with a savory peanut sauce can be made in under 30 minutes. They're packed with protein and will leave you feeling full and satisfied.
I don't know why but I can't turn down a good peanut sauce. The creamy, nutty, zesty sauce with a umami flare gives me all the feels. It's super simple to whip up and can be made ahead of time!
Peanut sauce + Lettuce wrap= weeknight dinner goals.
This lettuce wrap recipe is a perfect weeknight dinner because its light, filling and can be made in under 30 minutes. Yep, I stand by it.
Ingredients
- Boston/Bibb lettuce: s the way to go in lettuce wraps. In my 5 ingredient chicken salad I used romaine lettuce and although it was good, Bibb is the gold standard.
- Ground Turkey/ Ground Chicken: I prefer a ground meat in this recipe but you could use shredded chicken if you'd prefer.
- Water chestnuts: Don't sleep on water chestnuts guys! They provide the perfect crunch in these peanut sauce lettuce wraps and a can of them is pretty cheap!
- Sesame oil: I labeled the sesame oil as optional in this recipe because well, you don't need it per say but it definitely amps up the flavor! You won't use too much of it in this recipe but I love the flavor for other sauces/ stir-frys so you will definitely get some use out of it!
Peanut Sauce
Who doesn't love a good peanut sauce? Change it up and use crunchy peanut butter instead of creamy and you won't be disappointed!
Also this recipe make A TON of sauce. I used the remaining sauce to dip in some veggies and spread on a pita with some deli meat for a little change of flavor.
If you don't have fresh ginger on hand, you can use ground ginger (1 tsp).
Gluten free option is to use coconut aminos instead of soy sauce.
How to Make
First, you will want to cook the ground turkey/chicken (whatever you are using) in the sesame oil in a nonstick pan over medium high heat. I use a lid when sautéing meat because it allows it to cook a little faster.
While the meat is cooking, prepare the peanut sauce by mixing the ingredients together in a small bowl. Use a whisk to help emulsify and really get a sauce consistency. You can also use an immersion blender.
After you finish whipping up the sauce, the meat should be cooked. Add in the water chestnuts to the meat and stir to combine. Remove from heat.
Scoop the meat and water chestnut mixture into a lettuce cup, drizzle or spoon the peanut sauce next to the meat (or on top of it). Add in a slice of bell pepper and garnish with scallions, lime and sesame seeds.

Ingredients
- 1 lb ground turkey or chicken
- 2 tsp sesame oil (optional)
- 4 ounces(~½ cup) (or half a can) water chestnuts, chopped
- 1 head of Boston lettuce
- 1 bell pepper, sliced thin into strips
- 1-2 stalks green onions, chopped
- Garnish: Lime, sesame seeds
Peanut Sauce
- 2 tbsp low sodium soy sauce (coconut aminos if GF)
- ½ cup peanut butter (crunchy or creamy)
- 2 tsp fresh ginger zested (or 1 tsp ground ginger)
- ½ tsp garlic powder
- 1 tbsp honey (can sub agave nectar)
- ½ lime, juiced
- ¼-½ cup water to thin as desired
Instructions
- In a nonstick pan, place ground turkey over medium high heat and break into small pieces using a wooden spoon. Optional to pour 2 tsp of sesame oil in pan while the meat cooks. Place a lid on the pan to cook the turkey faster. Be sure to check on the ground turkey every couple minutes to ensure the bottom doesn't burn. Keep breaking the meat up into small pieces, similar to taco meat.
- While the meat is cooking, place all the ingredients for the peanut sauce in a bowl and whisk to combine. Add more or less water depending on how thick you want the sauce.
- After the meat has finished cooking, add in ½ cup chopped water chestnuts to the meat. Mix to combine.
- Begin to assemble the lettuce wraps by placing the meat mixture inside of a lettuce cup with a drizzle of sauce and a slice of bell pepper. Top with chopped scallions, fresh lime juice and and sesame seeds
Notes
- If GF, use coconut aminos in place of soy sauce
- Sub 2 tsp fresh grated ginger for 1 tsp dried ginger
