This s'mores cookie skillet is made in a cast iron skillet and can be cooked in the oven or straight on the grill for a fun summer dessert!
We know all cookie skillets are amazing, but have you tried a s'mores cookie skillet?! I seriously could eat the whole pan! It's essentially a s'mores cast iron skillet.
This s'mores cookie skillet is going to be my favorite recipe of the summer! I am so excited to show it to you guys. It tastes exactly like s'mores, but in skillet form.
It's made with basic pantry staples plus marshmallows and graham crackers, unless those are also pantry staples for you.
I tested this recipe a few times, but honestly each time I didn't mind it because I could just eat the leftovers. The graham cracker flour gives the cookie a nice flavor and the marshmallows are added at the end and became a melty treat.
Ingredients
- Maple Syrup
- Brown sugar (light or dark is fine)
- 1 egg
- Vanilla extract
- Butter, softened
- Flour
- Graham cracker, crushed finely (about ½ cup)
- Baking soda
- Salt
- Chocolate chunks, pieces
- Marshmallows
The graham crackers can be finely crushed by pulsing them in a food processor, blender or taking a mallet to a zip lock bag. Just make sure there are no large chunks remaining.
How to Make a S'mores Cookie Skillet
You will need a cast iron skillet or small corningware oven safe dish for this recipe. I prefer a cast iron skillet because the bottom is a little crispy while the top is gooey.
First, make sure your cast iron skillet is greased with cooking spray.
Combine all the wet ingredients together in a small bowl. Use an electric mixer to throughly mix in butter so no chunks remain.
Next, combine all dry ingredients in a large bowl, mix to combine. Add wet ingredients to dry ingredients and stir. Add in chocolate chunks/pieces.
Bake at 350F for 15 minutes. Add in marshmallows and more chocolate chips to top.
Remove from oven, let it cool for 5 minutes prior to serving.
If you are planning to cook this on the grill...
This s'mores cookie skillet can be made on the grill if you want! Here is what you will do:
- Turn down the burners on your grill to low/medium. Place cast iron skillet with batter in it over indirect heat. Indirect heat means not directly over a burner that is turned on.
- Close the grill top and monitor temperature inside. Do not exceed 375F. Cook for 10 minutes, then check for doneness.
- Add marshmallows at the end after cooking is complete. They will become gooey by the heat of the cookie skillet.

- ¼ cup brown sugar, packed (light or dark is fine)
- ¼ cup maple syrup
- 1 egg
- 1 tsp vanilla extract
- ½ cup all purpose flour
- ½ cup graham cracker flour (finely pulsed graham cracker)
- ½ tsp baking soda
- ½ tsp salt
- ½ cup chocolate chunks/pieces or chips
- Mini Marshmallows for topping
Instructions
- Preheat oven to 350F and spray a cast iron skillet or small oven safe casserole dish with cooking spray.
- In a small bowl, combine softened butter, sugar, maple syrup, egg and vanilla. Using a hand mixer, process until no large chunks appear.
- In a large bowl, combine dry ingredients together (flour, graham cracker, baking soda and salt) and mix.
- Pour the wet ingredients into the dry ingredients and stir until fully incorporated. Add in chocolate pieces.
- Pour into greased baking vessel. Top with additional chocolate chips if desired.
- Bake at 350F for 15 minutes, remove from oven, top with mini marshmallows.
- Remove from oven, let it cool then enjoy!
