These peanut butter cookies are chewy and melt-in-your-mouth good. They are gluten free and can be made paleo with coconut sugar instead of brown sugar!
I don't think I can go a week without consuming peanut butter in some form. Rather it be in a peanut sauce in a pad Thai or chopped salad, peanut butter and I go hand and hand.
Now I have a few cookie recipes on here like these oatmeal chocolate chip cookies, which are a favorite or these double chocolate chip cookies. It won't be a surprise that I made these with an alternative flour.
These peanut butter cookies with coconut flour are so soft. I love using coconut and almond flour in baking because they make the cookies or blondies SO incredibly soft. See below for substitutions instead of coconut flour!
Ingredients
- Peanut butter: The more natural the peanut butter is the better. AKA the ingredient list should just be peanuts, or maybe peanuts + salt but thats your call.
- Brown sugar: You can substitute coconut sugar if you are paleo
- Maple syrup: I love the rich flavor this adds to the cookies!
- Cinnamon: Because why not.
- Baking soda, egg and vanilla extract: The usual suspects in baking. I haven't tried these with a flax egg yet but I'll be sure to post on my instagram if I do!
- Coconut flour: A little coconut flour goes a long way! If you have more coconut flour laying around check out these peanut butter blondies to use it up!
How To Make
Since theses chewy peanut butter cookies don't contain a ton of dry ingredients. You can add everything to one bowl.
I would suggest starting with the egg, make sure you whisk the egg well. This will ensure a fluffier cookie.
Next, add in the peanut butter, vanilla, brown sugar and maple syrup. Mix together well.
Lastly, add in the baking soda, cinnamon and three tablespoons of coconut flour.
Alternative Flours To Use
You can substitute about ¾ cup of almond flour instead of coconut flour in this recipe. If the recipe still seems to wet, I would add another tablespoon of almond flour in.
I would always start with less and add more if you need it!
If you want to use white or whole wheat flour, you might have to play around with the recipe a bit. Since coconut flour is so absorbent using white flour will not hold the batter together as well.

Ingredients
- 1 egg, whisked
- 1 cup peanut butter
- 1 tsp vanilla extract
- ¼ cup brown sugar (coconut sugar if paleo)
- ¼ cup pure maple syrup
- ½ tsp baking soda
- ¼ tsp cinnamon
- 3 tbsp coconut flour
Instructions
- Preheat oven to 350F and prepare a cookie sheet or sheet pan with parchment paper or cooking spray.
- In a large bowl, whisk egg until frothy. Add in peanut butter, vanilla, brown sugar and maple syrup. Mix well.
- Add in baking soda, cinnamon and 3 tbsp coconut flour until well combined.
- Place cookies on baking sheet and bake at 350F for 10 minutes. Let them cool for 10 minutes before moving to drying rack.
Notes
Can substitute brown sugar for maple syrup.

These are so easy to make and so yummy!!! I love the chewy texture and the hint of cinnamon is so unique but tastes so amazing. I drizzled dark chocolate on them to get that Reese’s feel! I made them for a dinner party and everyone loved them!
