These 4 ingredient peanut butter and jelly bites are easy to make, require minimal clean up and are kid friendly! This recipe is great for lactating mommas too!
The combination of peanut butter and jelly is an old time classic. I have so many peanut butter recipes on here, but I think that these 4 ingredient peanut butter and jelly bites have got to be the easiest. They don't require any baking, although you do need to pop them in the freezer to harden up a bit.
I made this recipe because I love the flavors of peanut butter and jelly together, but I don't always want them on a sandwich together, hence... peanut butter and jelly bites. Each bite contains almost 3 grams of protein and 2 grams of fiber. 🙂 That makes these energy bites a healthy mid morning snack or perfect for when the kids come home from school.
Ingredients in Peanut Butter and Jelly Bites
- Peanut butter: I used a creamy, natural peanut butter for this recipe. They were a little sticky at first, but placing the batter in the freezer for 20 minutes helps you mold into balls a lot more easily.
- Jelly: I used a strawberry rhubarb jelly for this recipe and it was incredible! I found it at my local grocery store (my mom makes a really good one too 🙂 )
- Old fashioned oats: I suggest using old fashioned oats for this recipe because they are less powdery than quick cooking oats and help you form a better ball.
- Flaxseed meal: The flaxseed meal is full of healthy fats and helps mold into bites. If you are a breastfeeding momma, flaxseed is great, but you can also add brewer's yeast.
You don't need a blender or food processor for this recipe! That is the greatest part! Less dishes, less mess. All you need is a large bowl and spatula or spoon to mix. I placed the formed balls on a sheet pan to freeze, but you could place the peanut butter and jelly bites right on a plate or Tupperware container.
FAQ's
Are these peanut butter and jelly energy bites gluten free?
They can be gluten free by using certified gluten free oats! (However if adding brewer's yeast it is not gluten free!)
How should they be stored?
I would suggest storing them in the freezer, but you can also keep them in the refrigerator.
Does it matter what kind of jelly I use?
I used a common store bought jelly that was a 'jelly-like' consistency. I would steer away from jellies that are very thin.
What if I am having a difficult time shaping the energy bites?
I would suggest placing it back in the freezer for a few more minutes. If the batter seems too dry, try adding more jelly to the mixture. If it seems too wet, try adding some more oats to help firm up the texture.
