All right, let me tell you why I love this strawberry farro salad.
- It's high in fiber (yay for fiber!). A diet high in fiber is shown to reduce the risk of cardiovascular disease, type 2 diabetes and colon cancer.
- It's all plant based
- Has all the fresh flavors of summer
- The only thing you have to cook is the farro
What is farro?
Farro is a grain that is chewy, dense and great on salads and soups. It is high in zinc and magnesium and one cup of farro contains about half the recommend amount of fiber in a day.
Where can I find Farro?
You can find farro in the grocery store near the rice, quinoa, wheat berries and grains.
How to make
Typically it will say how to cook the farro on the back of the package. I normally add some flavor and cook the farro in broth (chicken or vegetable) and add any aromatic spices during the cooking process.
I add the liquid (broth or water) over the desired amount of farro in a pot. Cook for about 25 minutes at a simmer.
Ingredients
- Cucumber: You can peel your cucumber if you don't like the skin (ME).
- Chickpeas: For some plant protein. I use a can, rinsed and drained, for this farro salad recipe.
- Dried Cherries: You can find dried cherries near the produce section in the grocery store. I love dried cherries in this 5 ingredient chicken salad recipe too!
- Basil: Optional in this recipe, but so good if you happen to have some in your herb garden!
- Strawberries: Nothing better than a fresh summer strawberry.
- Feta: Brings a salty note to the dish!
I like to let the salad sit in the fridge for about 30 minutes before eating just to let the flavors marry together.

Description
This strawberry farro salad is an easy summer salad and quick lunch idea that is full of plant based protein and fiber.
Ingredients
- ½ cup uncooked farro
- 1 cup cucumber, chopped
- 1 cup strawberries, diced
- 1 can chickpeas, rinsed and drained
- ¼ cup dried cherries, cut in half (can sub raisins)
- ¼ cup feta, crumbled
- ½ lemon, juiced
- ¼ tsp salt
- 2-3 tbsp EVOO
- Garnish: basil leaves (optional)
Instructions
- Cook ½ cup farro according to package instructions. Drain and rinse, set aside.
- Add cucumber, strawberries, dried cherries, lemon, salt and olive oil in a large bowl. Toss to combine. Crumble feta on top and gently toss to incorporate.
- Add in the farro to the salad mixture. Garnish with chopped fresh basil leaves if desired.
Notes
½ cup uncooked farro will yield about 1.5 cups cooked farro.
If you do not have dried cherries you can sub cranberries, raisins or chopped dates.
This recipe would also be great with some sliced avocado on top!
