It's begun, winter 2019. We finally have snowfall here in Michigan and I've been eating so many warm, cozy dishes like this Healthy Chicken Pot Pie with Biscuits, but my body was like, "Give me green-ness!" Hence this 5 minute avocado green goddess dressing.
This avocado green goddess dressing coats lettuce beautifully. I mean it gets every nook and cranny. What more could you ask for in a dressing? The best part: 5 minute prep. Just throw everything in a blender and go. If you don't have a blender, a food processor would work, but you might have to scrape down the sides a couple times. Check out another one of my favorite dressings, Almond Turmeric Dressing(copycat to Trader Joe's).

Ingredients for Avocado Green Goddess Dressing
- Green onions (just the green part!)
- 1 Avocado
- Plain Greek Yogurt
- Lemon Juice
- Red Wine Vinegar
- Garlic
- Avocado Oil or EVOO
- Salt & Pepper
- Fresh Spinach
- Water
You can use frozen spinach, but it might be a little darker and the consistency will change a bit. The sauce is good for up to 10 days in the fridge in a sealed container.

Ingredients
6-8 green onions (bulbs removed)
1 avocado
2 tbsp plain greek yogurt
3 tbsp lemon juice
2 tsp red wine vinegar
1 clove garlic
¼ tsp salt & pepper
½ cup extra virgin olive oil or avocado oil
1 cup fresh spinach
½ cup water
Instructions
1. Place all ingredients in a blender and blend until smooth.
Notes
Stores in refrigerator for up to 10 days.
You can use frozen spinach, but it will change the consistency a bit.
