Wow, okay. You guys will let me know when I have too many instant pot recipes on my blog, right? Most (if not all) of my instant pot recipes are slow cooker friendly too. I always try and explain how to make it in the slow cooker in the notes below the recipe. I have just been in soup mode lately! The instant pot makes it so easy! This is not an ad. I have really grown to love my instant pot because you can literally 'set it and forget it.'
This instant pot chicken soup is a bit on the spicy side. However, my friends would call me somewhat of a wimp when it comes to spiciness. So take that with a grain of salt.
Why I Love this Instant Pot Chicken Soup
I had a hard time naming this soup because I wouldn't call this recipe a white chicken chili or chicken tortilla soup. It's more of a salsa verde chicken soup or spicy chicken soup. I love the little amount of heat the salsa verde brings and the green chilies. It gives it that slight acidity and spicy note that I love in this soup.
Ingredients
- Onion & garlic: White or yellow onion will work!
- Large chicken breasts: Now when I say large, I buy the Costco size chicken breast packets. Each chicken breast can easily feed 2 people. If your chicken breasts look like it's meant for 1 serving, double it.
- Corn, northern beans and green chilies: I love things that I don't have to chop, prep or clean. Just dumping these ingredients into the instant pot could not be easier.
- Salsa Verde: Any brand will work here. I made it using this brand.
- Chicken broth: You will need 1 quart or 4 cups of chicken broth. I used a low sodium variety.

Description
This instant pot chicken soup is made with salsa verde for a little kick of heat. It's gluten free, dairy free and so easy to make in the instant pot or slow cooker.
Ingredients
- 1 cup onions, diced
- 2 cloves garlic, minced
- 2 tbsp oil (avocado, olive, whatever you have will work)
- Scant salt and pepper
- 2 large chicken breasts (enough for 4 servings)
- 1 cup salsa verde
- 4oz diced green chilies
- 1, 15oz can corn, drained
- 1, 15oz can northern white beans, with liquid
- 1 quart low sodium chicken broth
- Garnish: avocado slices, tortilla chips, sour cream, cilantro
Instructions
- Using the sauté function on the instant pot, place the onion, garlic and oil in the bottom. Cook for 1-2 minutes or until the onion starts to become translucent. Season with scant salt and pepper.
- Place the remaining ingredients into the instant pot. Place the lid on the instant pot and turn the valve to sealing. Set the function to manual for 12 minutes.
- Once the 12 minutes is up, carefully turn the valve to venting to release steam. Open the lid and remove the chicken breasts using tongs. Shred the chicken breasts using forks or a kitchen aid mixer. Place the shredded chicken back into the instant pot to combine. Serve in a bowl with sliced avocado, crushed up tortilla chips and cilantro on top.
Notes
Slow Cooker: Combine all ingredients in the slow cooker and cook on high for 4 hours or low for 8. Shred the chicken when it's finished cooking and place it back into the crockpot. Serve as desired.
If you are freezing, wait until the soup has completely cooled and transfer it to a plastic zip-lock bag.
