Hello, all! I am so excited to bring you this strawberry bread this week! There is something special about waking up and baking a fresh loaf of sweet bread. I love having a sweet in the house for visitors or just to enjoy for myself in the morning.
Also how easy is it to whip up in a bowl, pour into a bread pan and stick it in the oven?! No scooping, sifting, frosting required. I mean unless you are fancy and wanted a nice little powdered sugar glaze on top.
P.S. - I used white whole wheat flour, greek yogurt and coconut oil to make it a bit lighter.

How to Make & Ingredients
The ingredients are pretty basic. I haven't been able to find whole wheat flour in my grocery store since March, so I've been using white whole wheat flour.
- White whole wheat flour: If you have regular white flour, that will work too. This article breaks down the difference between white whole wheat flour and whole wheat flour (hint: they are both whole wheat!)
- Coconut oil: This strawberry bread recipe calls for ½ cup! If you don't have coconut oil, you can use canola oil.
- 3 whole eggs: If you wanted to make this bread egg-less, you can substitute a flax egg. I've done this and the texture will be a bit more crumbly, but I didn't mind it!
- Yogurt: I always use plain, greek yogurt!
After you whip up everything, combine the wet and dry ingredients and add in diced strawberries and chocolate chunks. If you don't have chocolate chunks, chocolate chips are a fine substitute.
Strawberries are abundant this time of year! I placed little sliced strawberries on top to give the picture that extra flare. Feel free to get creative! I love using these chocolate chunks because I think they melt nicely! They are also dairy free!
How to Store
I would recommend storing this strawberry bread at room temperature in an airtight container. It does become a bit dry if it's not airtight, so whip out that Tupperware!

Description

Ingredients
- 1.5 cups white whole wheat flour
- 2 tsp baking powder
- ¼ tsp salt
- 1 cup greek yogurt, plain
- 1 cup sugar
- 3 large eggs, whisked
- 1 tsp vanilla
- ½ cup coconut oil, melted
- 1 cup strawberries, diced
- ½ cup chocolate chunks + more for topping
Instructions
- Preheat oven to 350F and prepare a greased bread loaf pan.
- In a large bowl combine white whole wheat flour, baking powder and salt. Mix and set aside.
- In a separate bowl, whisk eggs together and add in greek yogurt, sugar, vanilla and coconut oil. Mix together well until ingredients are incorporated.
- Slowly pour the wet ingredients into the dry and stir until homogenous. Add in strawberries and chocolate chips or chunks.
- Pour batter into greased bread pan and cook at 350F for 55 minutes or until a toothpick runs clear in the middle.
- Let it sit for at least 10 minutes before slicing and consuming.
Notes
If you want to use all purpose flour instead of white whole wheat, you can use the same amount. 1:1 ratio.
If you wanted to substitute whole wheat flour for the white whole wheat you can use the same amount, 1:1 ratio.
Canola oil or avocado oil can be substituted for coconut oil.
I have not tried this recipe using honey or maple syrup instead of sugar. If you do, please let me know how it went in the comments below!
