Happy 2019, everyone! Before we jump into this healthy avocado egg salad with no mayo or dairy, I want to talk about one of my resolutions. In years past, I might have made a resolution to lose 10 pounds, improve my running time or something else that made me “feel good” about myself. These resolutions did the absolute opposite. It perpetuated self-loathing and decreased my self-esteem.
As time went on, I met people and family that make me feel my best and learned that restricting myself of certain foods or labeling foods as “good” or “bad” just led me wanting them more. It wasn’t until I learned about intuitive eating and took a class in college about the culture and emotions behind food that I really "got over" restrictive eating. Since then my New Year's resolutions do not consist of my vanity, but instead focus on hobbies and things that bring my joy.
One of my favorite parts of the blog is taking pictures of things like this healthy avocado egg salad and editing them in lightroom and photoshop. I will post some of my favorites on my instagram. Now, back to this Healthy Avocado Egg Salad…
Now, I’ve never been a fan of miracle whip or Helman’s. To be honest, condiments kind of freak me out in general. I don’t know what it is, but mustard should not be that yellow and ketchup was never something I used. So, as you could have guessed I never really liked egg salad growing up. But I do REALLY LOVE eggs and how quick they are to prepare, not to mention, a complete protein. For this healthy avocado egg salad I used half of the egg yolks and did not use mayo or dairy.
How can you make an egg salad without mayo?
Avocado: They lend such a creamy, fatty component to this healthy avocado egg salad. It won’t make you miss the mayo!
Tomatoes: Gives it a bright burst of flavor and pairs well with the dill, red onion and capers.
Red onion: I love a good bite of an onion. You can omit if you don’t like!
Fresh dill: Gives this healthy avocado egg salad a fresh herby flavor.
Different ways to eat:
- In a wrap. Great for lunches! noms.
- In a bowl with some seedy crackers. Um, YUM!
- Dolloped on a some toast for a filling breakfast. Yes, paLEASE!
- By itself. It's great alone and allows you to really taste all the flavors.
- On a bagel or sandwich. These flavors scream lox! So smear it on a bagel and let it fill you up.
Healthy Avocado Egg Salad (No Mayo or Dairy)
- Total Time: 10 minutes
- Yield: 4-5 servings 1x

This healthy avocado egg salad is great for people who are dairy free or who just want no mayo. It is filled with healthy fats, complete protein and is an easy lunch to meal prep.
Ingredients
2 avocados
4 hard boiled eggs + 6 hard boiled egg whites only
1 lemon juiced
½ red onion, chopped
½ cup cherry tomatoes, diced
3 tablespoons capers
¼ cup fresh dill, chopped
Instructions
- In a large bowl, use the back of a fork to mash the avocado. Chop hard boiled eggs and remove yolks from 6 of the eggs, chop up remaining egg whites.
- Add eggs, lemon, red onion, tomatoes, capers and dill into the bowl with the avocado and mix to combine.
- Eat by itself, in a wrap, with crackers or on a sandwich for a delicious healthy avocado egg salad.
Notes
Store in airtight container for 3-4 days.
