These strawberry shortcake bites are healthy, only contain 5 ingredients and require no baking! The perfect summer dessert!
So excited to bring you these strawberry truffles today! I couldn't decide on the name for this recipe, but it essentially tastes like the strawberry shortcake ice cream bar that you used to buy when you were little.
This version of no bake strawberry shortcake is a bit healthier, being that it is made with almond flour, real strawberries and graham crackers.
Speaking of graham crackers, have you guys been able to find them at the grocery store? For some reason my Meijer has been OUT for the past couple weeks. I stumbled upon a shipment last time I went and stocked up on a couple boxes for some other fun recipes for the summer.

How to Make Strawberry Shortcake Bites
Luckily all you need for this recipe is 5 ingredients.
- Strawberries
- Graham crackers
- Almond flour (coconut flour will work too!)
- White Chocolate Chips
- Coconut oil (or other cooking oil)
You will need a food processor or a blender and a microwave safe bowl for melting the chocolate!
I love to use wax paper on top of a cookie sheet or plate for non stick storage when you go to freeze these strawberry truffles.

This recipe makes about 16 strawberry shortcake balls. I used this size cookie scoop to scoop out the filling from the food processor. If you don't have a cookie scoop, the size is about 1.5 tbsp.
I used graham crackers that are flavored with honey because that's what my grocery store had. The original graham crackers will work too.
If you don't have almond flour, but have coconut flour, I would suggest starting with ¼ cup coconut flour and adding a tablespoon at a time after that. You want the filling to be slightly sticky, but you also want it firm enough to form a ball with the scoop without losing form.
How to Store
After they have set up in the freezer after dipping them in chocolate, I would place them in the refrigerator.
If you store them in the freezer, the inside will be too hard and not have that "truffle" like texture.
They will keep for 10 days!

Description
These strawberry shortcake bites are healthy, only contain 5 ingredients and require no baking! The perfect summer dessert!
Ingredients
- 1 cup strawberries, roughly diced
- 1 sleeve graham cracker sheets (about 9 full sheets)
- ¾ cup almond flour
- 1 cup white chocolate chips (sub dairy free as needed)
- 2 tsp coconut oil (can substitute canola, vegetable or avocado oil)
Instructions
- In a food processor, process graham crackers until finely crushed. There should be no large chunks visible.
- Add in strawberries and pulse until finely diced, you don't want to puree the strawberries. Should still be able to see small pieces.
- Add in almond flour and pulse or mix to complete the filling.
- Scoop the filling using a tablespoon or cookie scooper onto wax paper or a lined cookie sheet. It should make about 16 balls. Once scooped, place in freezer for 20-30 minutes to harden.
- While the balls are freezing, in a microwave safe bowl, melt the chocolate chips and coconut oil together. Heat on high for 30 seconds, stir and heat for another 30 seconds until liquid.
- Once the balls are hard, remove from freezer and gently dip each ball into the melted white chocolate. Place back on the cookie sheet after being dipped. Option to top with crushed graham crackers.
- Place in freezer again for 5 minutes for chocolate to harden. Remove from freezer and enjoy. Store in refrigerator.

I used honey flavored graham crackers. Original will work too.

I make these ALL THE TIME!!! They are sooo good. I’ve been lazy and frugal lately so instead of white chocolate I’ve been buying and slightly melting french vanilla frosting and covering the tops with it instead. I also add a bit of melted butter to the mixture to make it less dry

This is my favourite sweet treat ever!!!! I love how quick it is to make, I love how cute they look plated. I’ve made them multiple times but I will say, when I made them for a party, after about an hour of them being out of the fridge they started to get mushy so definitely keep them cooled!
