These vegetable kabobs are a healthy side dish to any recipe. The onions get caramelized and begin to taste sweet, the mushrooms are so juicy and the peppers and zucchini get that perfect charred flavor.
Summer is here and the time is right for easy vegetable kabobs! When the temperature rises, who wants to cook inside? No one here, so these easy vegetable kabobs are the answer to a healthy side dish prepared right from your grill top!
If you don't have access to a grill or wanted to make these in the oven, you can absolutely do it! See below for instructions on how to make them in the oven by roasting up the veggies.
What to season them with
It's important to note that before you begin to assemble your vegetable kabobs that you want to soak the skewers in water for about 20-30 minutes. The best pan I found to do this was a cake pan (9x13) that could fit the skewers and submerge them in water.
While the skewers are soaking in water, chop and prep the vegetables that will go on the kabobs. I chopped everything at once ahead of time and placed them in a large bowl.
Next you will make the marinade. It's up to you how long you want to marinate the vegetables for. I think anywhere from 10 minutes to overnight is perfectly fine. They will taste great either way.
The seasoning/marinade for vegetable kabobs...
- EVOO
- Salt
- Garlic and onion powder
- Balsamic vinegar
- Italian seasoning (you can generally buy this pre-made in the spice section of the grocery store!)
How To Make On The Grill
First off, make sure your grill is nice and hot. I have an external thermometer on our grill that tells me how hot it is inside. When it reaches 375-400F, place the vegetables kabobs right on the grill grates.
Sean and I have this Weber Spirit 3 burner grill. I turn all the burners on medium/high heat and place the vegetable skewers right over top of each burner on the grates.
Close the grill lid and let them cook. I normally check on them every 5 minutes or so making sure to rotate and flip them as needed. After about 10 minutes, they should be nice and charred and ready to eat.
Can You Cook In The Oven?
Yes, you can cook and roast vegetables kabobs in the oven! Preheat the oven to 400F and cook on a baking sheet for about 10-15 minutes.

Ingredients
- ½ red onion, peeled
- 3 zucchini, sliced into ½ inch rounds
- 3 bell peppers, sliced into strips
- 8 ounces white button mushrooms (or portobello), whole
- 13-15 wooden skewer sticks
Marinade:
- ¼ cup EVOO (avocado or grapeseed oil works too)
- ½ tsp salt
- 2 tbsp balsamic vinegar
- ½ tbsp garlic powder
- ½ tbsp onion powder
- 1 tsp Italian seasoning
Instructions
- If wooden skewers are not pre-soaked, soak them in water for 20-30 minutes before assembling kabobs. I did this in a cake pan that would fit the size of the skewer.
- In a large bowl, mix ingredients together for the marinade. Whisk to combine.
- Place vegetables in the large bowl with the marinade. Toss to coat. Option to let the vegetables marinade or just place them right on the skewers.
- Assemble the kabobs by placing each vegetable on the skewer. I alternated vegetables to ensure that each kabob would have all the vegetables.
- Preheat grill and watch till external thermometer reaches 375-400F.
- Place vegetable kabobs directly over heat. Close lid of the grill and let them cook for 5 minutes. After 5 minutes, check on the kabobs and rotate/flip as necessary keeping burners on medium/high heat and thermometer showing 375-400F.
- After about 10 minutes, the vegetable kabobs should be done cooking, remove from grill and enjoy with a piece of chicken, steak, salmon or shrimp.
Notes
If using oven and not the grill, preheat to 400F and cook for 10-15 minutes on a baking sheet.
