This fresh and healthy shrimp salad is a nutritious lunch idea or light weeknight dinner. The creaminess of the avocado, sweetness of the corn and saltiness of the feta really tie all the flavors of this summery salad together.
Shrimp has always been one of my go to recipes for a quick and easy meal. I love shrimp in every form, like these spicy shrimp tacos or this 5 ingredient coconut shrimp recipe.
I also love how quickly it can be cooked. It normally doesn't require a cutting board and it's a freezer item that is normally always stocked in our house.
Nutritionally speaking, shrimp is high in protein, selenium, B12 and phosphorus. I don't eat much meat (especially these days), so I rely on protein from seafood, plants and legumes.
How to Make
The only cooking this recipe calls for is the shrimp. I always buy raw shrimp and cook it on the stovetop with a little oil and garlic.
You can even butterfly the shrimp if you want to for this recipe. It's when you take a pairing knife to the 'back' of the shrimp and flare out it's body a little. I like it because it makes the shrimp appear bigger and takes up more room in the bowl.

- Corn (either from can or fresh off the cobb)
- Red onion
- Arugula
- Feta
- Cracked pepper
This shrimp salad with avocado feeds about 2-3 people, depending on if it is the only thing you're serving with the meal. I like to pair it with a crispy flatbread to add in some whole grains!
What dressing goes on shrimp salad?
THIS DRESSING is so good and so summery. It has just the right amount of sweetness to lend to the salad.
- Extra virgin olive oil
- Lemon
- Honey
- Dijon mustard
- Pinch of salt
Simply whisk all the ingredients in a bowl and toss the remaining salad ingredients in on top.
If you haven't tried making a salad with the dressing in the bottom of the bowl, you definitely should! It coats everything more easily.

Ingredients
- 1 lb shrimp, thawed, raw and tails off
- 1-2 tbsp olive oil
- 2 cloves garlic, minced (can use ¼ tsp garlic powder)
- ½ can of corn, rinsed and drained (or about 1 cup fresh)
- ½ large avocado, diced
- 1 cup arugula
- ¼ cup red onions, diced
- ¼-½ cup feta, crumbled
- Garnish with freshly cracked black pepper
Dressing:
- 2 tbsp olive oil
- ½ lemon, juiced
- 1 tsp honey
- ½ tsp dijon mustard
- Pinch of salt
Instructions
- Cook shrimp in olive oil and garlic over medium high heat. Flip once to ensure even cooking on both sides.
- In a large bowl, whisk the ingredients for the dressing together.
- Add in remaining ingredients for the salad and toss in cooked shrimp.
- Serve immediately.
Notes
Best if consumed day of due to the avocado and dressing already on the salad.
